The fact is that none of these (except arguably korean) have popular playable scens. I say do whatever you think will be the best

I have tried creating several american 1v1 maps (and some are high quality) but they haven't really taken off, perhaps people actually do like games with more players. I've been thinking about an american revolutionary war myself, you could add "winter" units to represent the cold and make it very detailed

East Asia that includes the invasion of the ROC (Taiwan) by the PRC (China). Map to include China, Japan, Taiwan, Wake Island, Philippines, Indonesia, Singapore, Vietnam, Malaysia and northern Australia.

Check out my "nuclear korean war 1951" scenario. It's simple but has fun units and is exactly what you described, where the west has to use nukes to defend all these places.

A rework of the korean war map would be nice. it's very outdated. another cool option would definitely be a revolutionary war map (usa)

All great suggestions. Definitely.
Also love the idea of doing a revolutionary war map (USA) + Europe.
